Summer is officially in Seattle and it has brought the heat!  Everyone in the city is shedding their rain slickers and some tasty new eateries are stepping into the sunlight.  Commonly found at 2nd and Pike St., Maximus Minimus (aka the giant pig truck) is slinging some delicious pulled pork sandwiches and slaw to the masses downtown.  Joining the food truck revolution is Marination Mobile with Asian/Mexican fusion such as kalbi tacos and kimchi quesadillas.  For those desiring more stability in their eating habits, the already well known crew at Skillet Street Food now have a permanent walk-up window operating at 4th Ave S. and S. Main St.

35th Annual Ballard Seafood Festival

Come release your inner Viking at the annual Ballard Seafood Festival.  Enjoy live music, a beer garden, and delicious seafood, including fresh alder-smoked salmon.  Other activities include a raffle with a grand prize of a 7-day cruise for two to Mexico or the Caribbean aboard Holland America Cruiselines, a Couture Coverall Contest, and a lutefisk eating competition. Uff da!

Featured Recipe
 
Mediterranean Goat-Cheese Sandwiches

Makes 2 sandwiches
sandwich
2
plain bagels
3-4
ounces goat cheese or cream cheese
2
tablespoons olive paste (such as Peloponnese)
A few leaves of spinach
1
(1/8-inch-thick) slice red onion, separated into rings
4
(1/8-inch-thick) slices tomato
6
basil leaves, thinly sliced
1
teaspoon chopped capers
2
teaspoons balsamic vinegar
1
teaspoon olive oil
1/8
teaspoon freshly ground pepper
  1. Spread goat cheese or cream cheese evenly over both bagels.

  2. Spread the olive paste evenly over the goat cheese.

  3. Arrange spinach, onion rings, tomatoes, basil, and chopped capers on top. 

  4. Mix balsamic vinegar and olive oil together in a small bowl.  Drizzle over sandwiches.  Sprinkle with pepper.  Put both sides of bagels together and serve.
