ranging from Spanish cheeses to Swedish pastries, European
charcuterie to Ethiopian flatbread. Our expert guides will
take you to the hidden gems and newest food artisans to join
the Market. We’ll even explore the labyrinth of 100+ mom and
pop shops “Down Under” the main level of Pike Place Market.

Chicken Yassa
Makes 2 servings
|
2 |
chicken
breasts |
3 |
tablespoons
of oil for frying |
6 |
limes |
2 |
large onions |

ground red pepper
salt and ground black pepper to taste |
1 |
bay leaf |
2 |
tablespoons oil for marinating |

Cut the chicken into eight large pieces.

Squeeze juice from five limes and mix with
salt, ground red pepper, black pepper, and bay leaf.

Slice onions finely, spread over chicken
and mix well with two table spoons of oil and lime marinade.
Leave for a minimum of 2 hours (or refrigerate overnight) to
marinade.

Drain chicken pieces and
grill lightly, preferably over charcoal or wood.

Heat
some oil in a frying pan.

Drain onions and sauté gently
in the oil until soft. Add the juice of the remaining lime
and cook for five minutes.

Add the chicken pieces and
one glass of water.
-
Cover and simmer for 45 minutes. Serve over rice.
